1 pkg Morningstar Farms Grillers ground meat substitute
1 chopped onion 1 green pepper 1 Jalapeno pepper 1 can of diced tomatoes 3/4 bottle of beer (you can drink the rest) 1 can tomato soup 1 tablespoon cumin 1 teaspoon chili powder 2 garlic cloves 1 teaspoon cilantro
I "browned" the Morningstar "burger" as if it were real ground meat with a little olive oil, then added the onion, peppers, tomatoes, and spices. In my opinion the Morningstar products are the best vegetarian stuff on the market. Make sure the jalapeno is finely chopped. Hard core chili fans could add another Jalapeno pepper or two, and the spices can always be adjusted to taste. Add a little sugar to neutralize the acid in the tomatoes. After all the ingredients are added, turn the heat down and allow to simmer for at least 1/2 hour at low heat. Non-heart patients can salt to taste. You can grate a little no fat cheese on top, or not.
As I said before, this is a safe for all chili recipe - not real spicy, but full bodied nonetheless.
