This recipe kicks ass: make it the day before you are going to eat it.
1 (16-ounce) jar roasted peppers, drained 2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil 2 cloves garlic, finely chopped 1 large onion, finely chopped 1 cup dry white wine 1 (28-ounce) can crushed tomatoes A handful chopped flat-leaf parsley 1 tablespoon oregano 4-5 fresh basil leaves Salt and pepper
Grind drained roasted peppers in a food processor. You can chop the other stuff while you're at it.
Heat a large skillet over moderate heat. Add extra virgin olive oil, garlic, and onion to the pan. Saute garlic and onion 3 minutes, stir in roasted peppers. Saute pepper paste 2 minutes, stir in wine, reduce liquid 1 or 2 minutes. Stir in tomatoes and parsley. Season sauce with salt and pepper and simmer - the longer the better.
Hold overnight and serve one of two ways:
1. Place boneless chicken breasts in a dutch oven. Top with fresh mozzarella, and finally, red pepper sauce. Bake 1-2 hours at 350F.
2. Serve with tortellini of your choice, or you can even serve the tortellini as a side with the chicken.
I have even made pizza out of this sauce. I have been trying to copy a roasted pepper sauce I got from a gourmet shop for some time and this may not be that close but I don't care. I love it.
If you want to go through the toiletry of roasting the peppers yourself, knock yourself out. It's a lot of work. Canned peppers are expensive but so are fresh peppers.

Mrs Remey makes this with all of the ingredients listed albeit in slightly different proportions. In the warmer months she will make it with fresh red peppers split, then I get to roast them on the gas grill. She uses canned Italian tomatoes pureed.

So far it end up better that regular recipe. Problem is that you don't remember exactly what you done to it to make it good.
