Gentlemen and not so gentle ladies (just kidding). I had many pizzas around the us, however nothing compares to the pizza in Italy.
Incredients:
2 1/2 tbsp fresh cake yeast of 1 pkg of dry yeast.
1 cup of lukewarm water
pinch of salt
1 tbsp of sugar
3 to 3 1/2 cups of unbleached white flour
Warm medium mixing bowl in some hot water and drain it. place the yeast in the bowl and pour on the warm water. Stir in sugar and mix with fork and allow to stand until yeast is dissolved and start to foam 5-10 minutes.
With use of wooden spoon to add and mix the salt with about 1/3 of flour into the bowl with yeast. Mix in another third of flour. Stir until the dough forms a mass and begin to pull away from the sides of the bowl.
Springle some of the remining flour on the workable surface and place the dough on it. Begin to kead and work rest of the flour into it little at the time. Knead for about 8 to 10 minutes. By the time you are finished should be elastic and smooth. Form it into the ball. Then lightly oil the mixing bowl (use olive oil) and place the dough in it. Stretch a moistened dish towel over it. and leave it stand in the warm place until dough has doubled. It will probably take 40 to 50 minutes.
Punch the dough down with your fist and knead for another 1 or 2 minutes.
If you want two large pizzas, divide the dough into two balls. If you want appetizers only divide into four even balls. Pat the ball of dough into a flat circle on the slightly foured surface. With a rolling pin roll it out until you have 3/8 to 1/4 inch thick crust. place it on slightly oil pan. Add Italian sauce or what you like and bake until is done.
You never go back to the dogs. ;D
