Ingredients 3 eggs separated 2 cups mascarpone cheese at room temperature 1 tbsp vanilla sugar 3/4 cup cold very strong black coffe 1/2 cup kahlua or other coffe flavor liqueur 18 long cookies (Italian ladyfingers) sifted cocoa powder and grated bittersweet chocolate to finish
Put the egg whites in a grease free bowl and whisk with an electric mixer until stiff and in peaks Mix the mascarpone vanilla sugar and egg yolks in a separate large bowl and whisk with the electric mixer until evenly combined. Fold in the egg whites then put a few spoonfulls of the mixture in the bottom of a large serving bowl and spread it out evenly. Combine the coffee and liqueur in a shallow dish. Dip a cookie in the mixture and turn it quickly so that it becomes saturated but does not disintegrate and place it on top of the mascaropne in the bowl. Add 5 more dipped cookies placing them side by side. Spoon in about one third of the remaining mixture and spread it out. Make more layers in the same way ending with the mascarpone. Level the surface then sift cocoa powder and grated chocolate on top.

Pete, I have a feeling we'd enjoy each other's cooking. I make Tiramisu too. My version, I cook and whip egg yolks, on the stove top with marsala or rum and then add marscapone cheese and fold in whipped cream so it's light and fluffy. I pour espresso mixed with grand marnier or rum over the lady fingers and layer it like you do. Other than the alcohol it's a lot like Olive Garden's Tiramisu. My family is very specific about the lady fingers being soaked properly though......no dry spots. lol!

We should start our own restaurant. I do enjoy your recipes. I am willing to try almost anything. My mom was the same way. When I was young she make a rum cake. Everything was soaked, including guest. They did not needed any drinks. Lot of them slept very good and for long time.
