I spotted this recipe at another site and felt it sufficiently cardiac worthy for initiating a thread for "Appetizers" here. Bacon Wrapped Pineapple BitesIngredients:1 whole pineapple, cored and cut into chunks or canned pineapple chunks drained and patted dry 1 pound of thin sliced bacon, cut in half Brown sugar sufficient to provide a sprinkled coating for the baked pineapple bites Instructions:Preheat oven to 375 degrees. Wrap each chunk of pineapple in a half a slice of bacon with excess fat trimmed off. Place on a wire baking rack or aluminum lined sheet pan. Bake for 20 minutes. Remove from oven and sprinkle the baked bacon covered pineapple bites with brown sugar and place under broiler for a few minutes - checking to assure they don't burn. Remove from oven, cool briefly and serve. **** Cucumber Quarters Wrapped in Deli Ham StripsA variation on the "pineapple bites" style recipe I've tried myself is to take quartered inch long slices of cucumber and wrap them in deli ham strips and secure the ham with a toothpick and serve cold. If you've been invited last minute to a party, or remember at the last minute that you've been invited and need to put together a quick offering for your host/hostess and the other guests, here's a surefire recipe for this traditional favorite. Quick and Easy Deviled EggsIngredients:12 cooled hard boiled eggs 1 cup of Miracle Whip (tm) Salad Dressing 1 tsp prepared mustard 1 tsp salt 2 tbsp paprika Instructions:Cut hard boiled eggs in half lengthwise and remove yolks Mash yolks to the quick in a bowl Add the wet and dry ingredients and mix well Spoon the yolk mix into egg hollows (or squeeze via cake decorator or its near equivalent - a plastic freezer bag with small hole cut in one corner thereof ;D) Sprinkle paprika over the tops of your finished deviled eggs - allow to set in the fridge until you're ready to party. That sounds good. I will try that. *** Hey, Pete! Thanks and it is a delicious treat - was making some for the Yankees versus Washington Nationals game today and decided to "share". BTW the Yankees swept the Nats by beating them in all three games of the series this weekend. ;D One thing about the above-posted recipe for deviled eggs, I use only half of the salt called for no matter what number in a subdivision I might make thereof.
