This recipe has been in our family since I remember. It is a very simple recipe. I modify that little bit for my taste. So far nobody dies and everyone like that. This is European recipe
Lecho
Onion Bell Peppers Tomatoes oil salt Pepper eggs ____________ Optional item
Bacon or ham or wurst 1/2 cup of ketchup mushrooms curry mild or hot (your choice) mild or medium or hot salsa. __________________________________ Oil in the frying pan and add large onions. When onion is slightly brown add cut bell peppers. When peers are soft ad tomatoes. Add salt and pepper. Then add eggs. Cook until done. _______________________________________ My version - Into lightly brown onions and bacon, add bell pepper and cut mushrooms. Cook until soft. The add tomatoes. When tomatoes are cooked in add 1/2 cup of ketchup and 1/3 of cup salsa (you can add more if you want too. With salsa you don't have to use salt and pepper. Add curry (hot or mild) for taste. Cook few minutes together and then add eggs. Cook until done. ____________________________________________________ I usually make more of the mixture without eggs and then take portion and freeze it or just store it in the fridgerator. Store portion I will use when I make Balkan dishes.

Hi Again, Pete - your egg recipe sounds delicious! All of those great flavors mixed together and not even needing eggs to complete it has my mouth watering as we speak. I left you a short note to that effect in my last post about deviled eggs in the "Appetizers" thread in case you didn't see it. Egg strata type casseroles are so easy to make and are great for a group on a camping trip, for a big family gathering at holiday times or for brunches for family and friends at any time. EGG STRATAIngredients:6 eggs 14 oz. can mushrooms 1 lb. pkg. sausage, cooked & drained 1 1/2 c. grated cheddar cheese 8 oz. pkg. frozen hash brown potatoes, thawed 1/3 c. heavy cream (or half and half) Instructions:Grease an 8" or 9" baking pan. Sprinkle 3/4 cup cheese at bottom. Break eggs into 3 rows of 2 (like if you were frying eggs). Break the yolks with knife but do not stir. Pour in cream. Put in mushrooms, potatoes, and sausage. Bake at 350 degrees for 1 hour. Top with remaining cheese for the last 15 minutes. Serves 8. And enjoy! Arethusa

Another campers breakfast we made is breakfast casarole. ________________ Bisquick Salsa two eggs milk

bacon or sausage Cheese (cheddar) shreded. ____________________ In the bowl mix bisquick, two eggs, salsa, little bit of milk together into a dough. Grease lightly backing dish. Lay bacon or sausage on the bottom of the backing dish. Spread dough in the backing dish. Spread lecho on the top of the dough. You can crack couple eggs on the top, depending how many people will serve. Cover with cheddar cheese. Cover backing dish with foil and cook at 400 degrees until done.

That recipe sounds delicious too Pete. Here's an egg casserole made with julienned strips of ham from Cooks.com: CHRISTMAS MORNING BRUNCH EGG AND HAM BAKE Ingredients:3 c. shredded Mozzarella cheese 3 c. shredded cheddar cheese 4 oz. can sliced mushrooms, drained 8 oz. cooked ham, cut into fine julienne strips 1/4 c. butter, melted 1 3/4 c. milk 8 eggs, beaten 1/3 c. sliced green onion 2 tbsp. fresh snipped parsley 1/2 c. flour Instructions:Preheat oven to 350 degrees. In a large bowl, lightly toss cheeses together. Sprinkle half of the cheese mixture in an ungreased 9 x 13 inch baking dish. In medium skillet, cook mushrooms and green onions in the butter, until onions are tender. Arrange vegetables over cheese. Arrange ham strips over vegetables. Sprinkle remaining cheese over ham. (To make ahead, prepare to this point, cover and refrigerate.) Lightly spoon flour into measuring cup; level off. In large bowl using a wire whisk, blend flour, milk, parsley and eggs; pour over layers in baking dish. Bake for 35 to 45 minutes or until mixture is set and top is lightly browned. Here's an example of the most common of this type of recipe, noting that the assembled product is designed to sit in the fridge for 24 hours before baking. Pieces of prepared ham or cooked bacon can be substituted for the sausage. BRUNCH EGG BAKE Ingredients:12 slices bread, cubed 1 doz. eggs 1 lb. sharp cheese, grated 1 lb. ground breakfast sausage, cooked 2 c. milk 1 stick butter 1/2 tsp. salt Instructions:Mix the bread and cheese together. Add cooked sausage and salt. Beat together the eggs and milk. Place the bread, sausage and cheese mixture in greased 9 x 13 inch pan. Pour egg and milk mixture over it. Place in refrigerator for 24 hours. When ready to bake, melt the butter and pour over. Bake at 350 degrees uncovered for approximately 45 minutes.
